Ingredients

The cake

  • ¾ cup walnut halves
  • 1⅔ cups white whole wheat flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground allspice
  • 6 tablespoons unsalted butter
  • ½ cup packed light or dark brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • ¼ cup nonfat plain Greek yogurt
  • 1 teaspoon pure vanilla extract
  • 2 cups peeled and chopped apples

The frosting

  • 6 ounces reduced-fat cream cheese
  • 2 tablespoons unsalted butter
  • ½ cup brown sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • ½ cup powdered sugar

Instructions

  1. Preheat the oven to 325°F and prepare a baking pan with parchment paper.
  2. Toast the walnuts in the oven for 8 to 12 minutes, then chop them.
  3. In a bowl, whisk together the dry ingredients.
  4. Cream the butter and sugars until light and fluffy, then add the eggs, yogurt, and vanilla.
  5. Mix in the dry ingredients until just combined, then fold in the apples and half of the walnuts.
  6. Spread the batter into the prepared pan and bake for 35 to 45 minutes.
  7. Let the cake cool completely before frosting.
  8. Prepare the frosting by beating the cream cheese, butter, and brown sugar, then mix in vanilla, salt, and powdered sugar.
  9. Spread the frosting on the cooled cake and top with remaining walnuts.
