Ingredients

The Cake

  • 1 ¾ cups almond flour
  • ¾ cup maple syrup
  • ¾ cup full fat coconut milk
  • 4 units eggs
  • 2 tsp cinnamon
  • ¾ tsp salt
  • 2 units apples, chopped

The Crumble

  • ½ cup pecans
  • ½ cup walnuts
  • 3 tbsp coconut oil
  • cup coconut sugar

Instructions

  1. Preheat the oven to 350°F.
  2. Line a baking dish with parchment paper, oiling the pan first.
  3. Wash and chop the apples into small pieces and set aside.
  4. In a medium bowl, whisk together the dry cake ingredients and set aside.
  5. In a small bowl, whisk together the eggs, coconut milk, and maple syrup.
  6. Pour the wet ingredients into the dry ingredients and mix well.
  7. Fold in the chopped apples.
  8. Make the crumble by pulsing all crumble ingredients in a blender or food processor for about 30 seconds.
  9. Layer half of the batter in the baking dish, followed by half the crumble mixture, then the remaining batter, and top with the remaining crumble.
  10. Bake for 45 minutes or until a toothpick comes out clean.
