Paleo Apple Crisp

Ingredients

The filling

  • 6-8 apples peeled, cored, and sliced
  • cup pure maple syrup
  • 1 tbsp cinnamon

The topping

  • 1 cup nuts (try pecans or walnuts and almonds)
  • ¼ cup coconut butter (softened)
  • 2-3 tbsp coconut sugar
  • a pinch salt
  • ½ cup fresh or frozen blueberries

Instructions

  1. Soften the coconut butter by placing the jar in a bowl of hot water.
  2. Preheat the oven to 350°F.
  3. Peel, core, and slice the apples, then mix them with maple syrup and cinnamon in a large bowl.
  4. Pour the apple mixture into a cast iron skillet or a 9x9 inch baking dish.
  5. In a food processor, pulse the nuts until mostly fine, then combine them with the coconut butter, coconut sugar, and salt in the bowl used for the apples.
  6. Mix the topping until crumbly, then sprinkle it over the apples.
  7. Add the blueberries on top of the mixture.
  8. Bake for 20-25 minutes until the topping is golden brown.
  9. Remove from the oven and serve, optionally with vanilla ice cream.
