Instructions
- Preheat the oven to 375°F.
- In a large bowl, combine the apples and blueberries with cinnamon, flour, and maple syrup, and stir to coat.
- Transfer the fruit mixture to a 9x13 inch pan.
- In the same bowl, mix together the oats, flour, shredded coconut, cinnamon, and salt for the topping.
- Stir in the maple syrup and coconut oil into the topping mixture.
- Dollop the topping over the fruit mixture in the pan.
- Bake for 45 minutes or until the topping is brown and the apples are soft, covering with foil if needed.
- Cool on a wire rack and serve warm or cold.
