Ingredients

The crisp topping

  • 1 cup old-fashioned oats
  • ½ cup almond meal
  • cup sliced or slivered almonds
  • cup maple syrup
  • 3 tablespoons melted coconut oil
  • ½ teaspoon salt

The blueberry filling

  • 2 pounds fresh blueberries
  • 2 tablespoons cornstarch
  • juice and zest of 1 lemon

Instructions

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, combine oats, almond meal, sliced almonds, maple syrup, melted coconut oil, and salt until evenly mixed.
  3. In a 9x9-inch baking dish, gently toss the blueberries with lemon juice, lemon zest, and cornstarch until coated.
  4. Spread the oat mixture evenly over the blueberries.
  5. Bake for 45 to 50 minutes, until the topping is golden and the blueberries are bubbling.
  6. Allow to cool for at least 10 minutes before serving.
