Ingredients

Crumble

  • 3 cups old fashioned rolled oats
  • 1 cup chopped walnuts or pecans
  • 6 tablespoons melted butter
  • 3 tablespoons honey
  • 1 medium lemon zest
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon coarse salt
  • dash pure almond extract

Blueberry Filling

  • 4 cups fresh or frozen blueberries
  • 1 medium lemon juice
  • ½ cup granulated sugar
  • 4 teaspoons corn starch
  • ½ teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 375°F and grease a 9x9 baking dish.
  2. Mix all crumble ingredients in a medium bowl until combined.
  3. In another bowl, combine the blueberry filling ingredients.
  4. Pour the blueberry mixture into the baking dish and sprinkle the crumble on top.
  5. Bake for 30-40 minutes until the blueberries burst and the topping is lightly browned.
  6. Serve with yogurt or ice cream.
