Ingredients

The berry mixture

  • 2 ½ cups blueberries
  • 4 medium peaches, pitted and sliced
  • 2 tbsp cornstarch
  • 2 tbsp coconut palm sugar

The crumble topping

  • 1 cup almond flour
  • ½ cup cooked quinoa
  • ¼ cup old-fashioned oats
  • ¼ cup coconut palm sugar
  • ½ tsp salt
  • ½ tsp cinnamon
  • ¼ cup coconut oil

Instructions

  1. 1. Preheat the oven to 350°F and grease a pie pan or 8x8 inch baking dish.
  2. 2. In a large bowl, combine blueberries, peaches, cornstarch, and coconut sugar, then pour the mixture into the prepared pan.
  3. 3. In another bowl, mix almond flour, cooked quinoa, oats, coconut sugar, salt, and cinnamon until combined.
  4. 4. Add coconut oil to the crumble mixture and mix until moist and crumbly.
  5. 5. Sprinkle the crumble topping evenly over the berry mixture.
  6. 6. Bake for 45 minutes and cool for 15 minutes before serving.
