Ingredients

The pie crust and filling

  • 1 crust homemade pie crust
  • cups fresh blueberries
  • ½ cup granulated sugar
  • cup all-purpose flour
  • 1 Tablespoon cornstarch
  • 1 Tablespoon lemon juice
  • 1 teaspoon lemon zest

The crumble topping

  • ½ cup packed light or dark brown sugar
  • 6 Tablespoons all-purpose flour
  • ½ teaspoon ground cinnamon
  • 5 Tablespoons unsalted butter, very cold and cubed
  • ½ cup old-fashioned whole rolled oats

Instructions

  1. Prepare the pie crust according to your recipe through step 5.
  2. Mix the blueberries, granulated sugar, flour, cornstarch, lemon juice, and zest in a bowl and refrigerate until needed.
  3. Preheat the oven to 400°F (204°C).
  4. Roll out the chilled pie dough and place it into a 9-inch pie dish, then fill it with the blueberry mixture.
  5. Mix the brown sugar, flour, and cinnamon in a bowl, cut in the cold butter, then stir in the oats and sprinkle over the pie.
  6. Bake the pie for 25 minutes, then reduce the temperature to 375°F (190°C) and bake for an additional 30-35 minutes.
  7. Cool the pie for 3 hours at room temperature before serving.
