Instructions
- Prepare the pie crust according to the recipe up to step 5.
- Make the filling by mixing sugar, flour, cinnamon, and allspice in a bowl, then fold in the peaches and blueberries.
- Preheat the oven to 400°F (204°C).
- Roll out one disc of chilled dough into a circle and place it in a 9-inch pie dish, then fill with the fruit mixture and dot with butter.
- Roll out the second disc of dough, cut into strips, and arrange them in a lattice pattern over the filling.
- Brush the lattice with beaten egg and sprinkle with a mixture of sugar and cinnamon.
- Bake for 20 minutes, then reduce the temperature to 375°F (190°C) and bake for an additional 30-35 minutes.
- Let the pie cool for 4 hours before serving.
