Mixed Berry Pie

Ingredients

The filling

  • cups blueberries
  • cups blackberries
  • cups raspberries
  • ¼ cup brown sugar
  • ¼ cup granulated sugar
  • ½ unit vanilla bean, scraped
  • 3 tablespoons corn starch
  • ½ unit lemon zest and juice
  • ½ teaspoon salt

The crust

  • 1 double pie crust store-bought or homemade

Instructions

  1. Prepare the pie crust and let it rest.
  2. In a mixing bowl, combine the berries, sugars, vanilla, corn starch, lemon zest, lemon juice, and salt.
  3. Roll out the first pie crust and place it in a 9-inch pie pan.
  4. Pour the berry filling into the crust.
  5. Roll out the second crust and place it over the filling, sealing the edges.
  6. Chill the pie in the freezer for 30 minutes.
  7. Preheat the oven to 400°F.
  8. Brush the pie with egg wash and bake for 20-25 minutes.
  9. Lower the oven temperature to 300°F and bake for an additional 30 minutes.
  10. Allow the pie to cool completely before serving.
