Instructions
- Prepare the pie crust and let it rest.
- In a mixing bowl, combine the berries, sugars, vanilla, corn starch, lemon zest, lemon juice, and salt.
- Roll out the first pie crust and place it in a 9-inch pie pan.
- Pour the berry filling into the crust.
- Roll out the second crust and place it over the filling, sealing the edges.
- Chill the pie in the freezer for 30 minutes.
- Preheat the oven to 400°F.
- Brush the pie with egg wash and bake for 20-25 minutes.
- Lower the oven temperature to 300°F and bake for an additional 30 minutes.
- Allow the pie to cool completely before serving.
