Ingredients

The filling

  • 2 cups quartered fresh strawberries
  • 2 cups fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup fresh blackberries
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar
  • ¼ cup cornstarch
  • ½ teaspoon ground cinnamon

The crust

  • 1 9 inch frozen pie crust in a tin, regular not deep-dish
  • 1 egg white beaten until foamy

Instructions

  1. Preheat the oven to 400°F and line a heavy baking sheet with aluminum foil.
  2. In a large mixing bowl, combine the strawberries, blueberries, raspberries, and blackberries with lemon juice and vanilla extract.
  3. In a separate bowl, mix sugar, cornstarch, and cinnamon, then add to the berries and stir to coat. Let sit for 15-20 minutes.
  4. Brush the frozen pie crust with beaten egg white and refrigerate for 15 minutes.
  5. Place the pie crust on the baking sheet and fill it with the berry mixture.
  6. Bake for 30 minutes, then tent with aluminum foil and bake for an additional 25 minutes until bubbly.
  7. Allow the pie to cool for at least 2-3 hours before slicing.
