Mixed Berry Slab Pie

The filling

Instructions
- Prepare the pie crust by mixing flour, salt, and sugar, then cutting in the cold butter until crumbly.
- Add ice water gradually until the dough forms, then divide and refrigerate for at least 2 hours.
- Mix the filling ingredients gently in a bowl and set aside.
- Preheat the oven to 375°F (190°C).
- Roll out one disc of pie dough on parchment paper to fit your baking sheet, about 1/8-inch thick.
- Place the rolled dough on a rimmed baking sheet and spoon the filling on top, leaving a border.
- Roll out the second disc of dough and place it over the filling, sealing the edges.
- Cut slits in the top crust for steam to escape and brush with egg wash.
- Bake for 45-55 minutes until golden brown and filling is bubbling.
- Cool before slicing and serving, optionally with ice cream.
