Ingredients

The crust

  • 4 cups all-purpose flour
  • teaspoons salt
  • 1 teaspoon granulated sugar
  • cups unsalted butter, very cold and cubed
  • ¾ cup ice cold water
  • 1 large egg (for egg wash)
  • 1 Tablespoon milk (for egg wash)
  • optional coarse sugar (for sprinkling on top)

The filling

  • 4 cups hulled and chopped fresh strawberries
  • 4 cups halved fresh blackberries
  • ½ cup granulated sugar
  • ¼ cup cornstarch
  • 1 Tablespoon lemon juice
  • 1 teaspoon pure vanilla extract
  • pinch salt

Instructions

  1. Prepare the pie crust by mixing flour, salt, and sugar, then cutting in the cold butter until crumbly.
  2. Add ice water gradually until the dough forms, then divide and refrigerate for at least 2 hours.
  3. Mix the filling ingredients gently in a bowl and set aside.
  4. Preheat the oven to 375°F (190°C).
  5. Roll out one disc of pie dough on parchment paper to fit your baking sheet, about 1/8-inch thick.
  6. Place the rolled dough on a rimmed baking sheet and spoon the filling on top, leaving a border.
  7. Roll out the second disc of dough and place it over the filling, sealing the edges.
  8. Cut slits in the top crust for steam to escape and brush with egg wash.
  9. Bake for 45-55 minutes until golden brown and filling is bubbling.
  10. Cool before slicing and serving, optionally with ice cream.
