Ingredients

The crust

  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • cup shortening
  • 6 tablespoons ice-cold water

The filling

  • cups fresh berries
  • ½ cup sugar
  • 3 tablespoons cornstarch

The egg wash

  • 1 egg egg
  • 1 tablespoon water

Instructions

  1. Mix flour and salt in a bowl, then cut in shortening until crumbly.
  2. Gradually add water, mixing until a dough forms. Divide into two disks and refrigerate for at least 30 minutes.
  3. In another bowl, combine berries, sugar, and cornstarch, and let sit for 10 minutes.
  4. Preheat the oven to 375°F (190°C).
  5. Roll out the dough into two 12-inch circles. Place one in a pie plate, fill with berry mixture, and top with the second crust.
  6. Trim and seal the edges, then cut vents in the top crust.
  7. Whisk egg and water, then brush over the crust.
  8. Bake for 50–55 minutes until golden, then cool completely before serving.
