Triple Berry Pie

The crust

egg (for egg wash, optional)
Instructions
- Preheat the oven to 375°F.
- Roll out the bottom pie crust and place it in the pie pan, trimming the edge to leave a ½-inch overhang.
- In a large bowl, combine the berries, sugar, cornstarch, lemon juice, and salt, stirring gently to coat the berries.
- Spread the berry mixture evenly in the pie crust.
- Roll out the top crust and cut it into strips to create a lattice top.
- Lay the strips over the filling, folding every other strip to place additional strips perpendicular.
- Trim the lattice strips and fold the bottom crust over the top, fluting the edges.
- Place the pie on a foil-lined baking sheet and bake for 75-90 minutes until bubbling.
- Cool the pie for at least 2-3 hours before serving.
