Triple Berry Pie

Ingredients

The filling

  • cups mixed berries (fresh or frozen)
  • 1 cup granulated sugar
  • ¼ cup cornstarch
  • 1 tablespoon lemon juice
  • a pinch salt

The crust

  • 2 unbaked pie crusts
  • 1 large egg (for egg wash, optional)

Instructions

  1. Preheat the oven to 375°F.
  2. Roll out the bottom pie crust and place it in the pie pan, trimming the edge to leave a ½-inch overhang.
  3. In a large bowl, combine the berries, sugar, cornstarch, lemon juice, and salt, stirring gently to coat the berries.
  4. Spread the berry mixture evenly in the pie crust.
  5. Roll out the top crust and cut it into strips to create a lattice top.
  6. Lay the strips over the filling, folding every other strip to place additional strips perpendicular.
  7. Trim the lattice strips and fold the bottom crust over the top, fluting the edges.
  8. Place the pie on a foil-lined baking sheet and bake for 75-90 minutes until bubbling.
  9. Cool the pie for at least 2-3 hours before serving.
