Individual Mixed Berry Pies

Instructions
- Preheat the oven to 375°F.
- In a large bowl, whisk together the sugar, cornstarch, and salt.
- Add the berries to the mixture and gently mix to coat.
- Incorporate the lemon juice and lemon zest, then divide the filling evenly into 4 ramekins.
- Cut the pie crust into 4 circles about 4 inches in diameter and roll them slightly to elongate.
- Cut a heart shape out of the center of each crust and place them over the fruit in the ramekins.
- Brush the crust with the beaten egg.
- Place the ramekins on a rimmed baking sheet and bake for about 40 minutes, until the berries are hot and bubbling and the crust is golden.
