Individual Mixed Berry Pies

Ingredients

  • 4 tablespoons raw sugar
  • tablespoons cornstarch
  • a pinch salt
  • cups fresh strawberries, stemmed and sliced
  • cups fresh raspberries
  • cups fresh blackberries
  • 1 teaspoon fresh lemon juice
  • ¼ teaspoon lemon zest
  • 1 package refrigerated pie crust
  • 1 large egg, beaten

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, whisk together the sugar, cornstarch, and salt.
  3. Add the berries to the mixture and gently mix to coat.
  4. Incorporate the lemon juice and lemon zest, then divide the filling evenly into 4 ramekins.
  5. Cut the pie crust into 4 circles about 4 inches in diameter and roll them slightly to elongate.
  6. Cut a heart shape out of the center of each crust and place them over the fruit in the ramekins.
  7. Brush the crust with the beaten egg.
  8. Place the ramekins on a rimmed baking sheet and bake for about 40 minutes, until the berries are hot and bubbling and the crust is golden.
