Ingredients

Blueberry Apple Mixture

  • 4 large granny smith apples, peeled and thinly sliced
  • ¾ cup blueberries
  • 2 tablespoons 1:1 gluten free baking flour
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 2 teaspoons cinnamon
  • ½ teaspoon salt

Oat Crumble

  • 1 cup gluten free rolled oats
  • ½ cup 1:1 gluten free baking flour
  • ¼ cup brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 6 tablespoons chilled unsalted butter, cut into pieces

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine sliced apples, blueberries, flour, honey, lemon juice, cinnamon, and salt, and gently toss to coat the fruit.
  3. Pour the fruit mixture into a 9"x9" baking dish or an 11" skillet.
  4. In a medium bowl, mix oats, flour, brown sugar, cinnamon, salt, and butter until crumbly.
  5. Evenly sprinkle the crumble topping over the fruit mixture.
  6. Bake for 35-40 minutes until the top is browned and the fruit filling is bubbly.
  7. Remove from the oven and serve, optionally with vanilla ice cream.
