Ingredients

Apple Filling

  • 5 medium apples, diced or sliced
  • 1 tsp ground cinnamon
  • a pinch ground nutmeg
  • ½ tsp pure vanilla extract
  • Tbsp almond flour
  • 1 Tbsp maple syrup
  • ¼ cup water

Topping

  • ¾ cup chopped pecans
  • ½ cup chopped walnuts
  • cup shredded coconut flakes, unsweetened
  • ½ cup almond flour
  • ¼ cup coconut oil
  • 3 Tbsp maple syrup
  • 1 tsp pure vanilla extract
  • 2 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 350ºF.
  2. In a food processor, combine the topping ingredients until they resemble a coarse texture.
  3. In a greased 9x9 inch baking dish, mix the apple filling ingredients, then stir in the water.
  4. Spread the topping evenly over the apples.
  5. Bake uncovered for 25 minutes, then cover with foil and bake for an additional 15-20 minutes until apples are soft.
  6. Let it set for 5-10 minutes before serving.
  7. Serve warm, optionally topped with whipped topping or ice cream.
