Ingredients

Filling

  • 5 cups peeled & chopped apples
  • 2 teaspoons lemon juice
  • cup packed light or dark brown sugar
  • cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground nutmeg

Topping

  • cup packed light or dark brown sugar
  • 1 cup old-fashioned whole rolled oats
  • ½ cup almond meal or almond flour
  • ½ teaspoon ground cinnamon
  • teaspoon salt
  • cup unsalted butter, melted
  • 2 tablespoons sliced or slivered almonds (optional)
  • 1 scoop vanilla ice cream (optional)
  • to taste none pomegranate arils (optional)

Instructions

  1. Preheat the oven to 350°F (177°C) and grease a baking dish.
  2. In a large bowl, mix all filling ingredients until apples are coated, then spread into the prepared pan.
  3. In another bowl, whisk together the topping ingredients, then stir in melted butter and sprinkle over the apples.
  4. Bake for 35–40 minutes until bubbly and golden brown, covering with foil if needed.
  5. Let cool for 5–10 minutes before serving, optionally topping with pomegranate arils and ice cream.
