Ingredients

The filling

  • 5 pieces sweet red apples
  • 1 unit lemon
  • ¼ cup raisins
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon

The topping

  • ½ cup almond flour
  • ½ cup oat flour
  • ½ cup chopped pecans or walnuts
  • cup coconut oil
  • ¼ cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F and prepare an 8-inch baking dish with nonstick spray.
  2. Core and thinly slice the apples, then place them in a mixing bowl.
  3. Add lemon juice, raisins, vanilla extract, and ground cinnamon to the apples and mix well.
  4. Pour the apple mixture into the prepared baking dish.
  5. In another bowl, combine almond flour, oat flour, chopped nuts, melted coconut oil, almond milk, vanilla extract, and cinnamon to make the topping.
  6. Stir the topping mixture and pour it over the apples in the baking dish.
  7. Cover with foil and bake for 35 minutes, then remove the foil and bake for an additional 20 minutes until the topping is golden and apples are soft.
  8. Serve warm.
