Instructions
- Preheat the oven to 350°F and prepare an 8-inch baking dish with nonstick spray.
- Core and thinly slice the apples, then place them in a mixing bowl.
- Add lemon juice, raisins, vanilla extract, and ground cinnamon to the apples and mix well.
- Pour the apple mixture into the prepared baking dish.
- In another bowl, combine almond flour, oat flour, chopped nuts, melted coconut oil, almond milk, vanilla extract, and cinnamon to make the topping.
- Stir the topping mixture and pour it over the apples in the baking dish.
- Cover with foil and bake for 35 minutes, then remove the foil and bake for an additional 20 minutes until the topping is golden and apples are soft.
- Serve warm.
