Ingredients

The topping

  • 1 cup old-fashioned oats
  • ½ cup almond meal
  • ½ cup chopped pecans or walnuts
  • teaspoons ground cinnamon
  • ¼ teaspoon salt
  • ¼ cup maple syrup
  • ¼ cup melted butter

The filling

  • 4 pieces apples
  • 2 teaspoons freshly-squeezed lemon juice

Instructions

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, combine oats, almond meal, nuts, ½ teaspoon cinnamon, and salt.
  3. Add maple syrup and melted butter to the mixture and toss until combined.
  4. In a separate bowl, mix the diced apples with lemon juice and the remaining 1 teaspoon of cinnamon.
  5. Spread the apple mixture evenly in a greased 8x8 or 9x9 inch pan and sprinkle the oat mixture on top.
  6. Bake for 35-40 minutes until the topping is golden and the apples are soft.
  7. Serve immediately, optionally with ice cream and caramel sauce.
