Ingredients

The filling

  • 4 cups peeled, sliced apples
  • 1 tablespoon coconut sugar
  • 1 teaspoon cinnamon

The topping

  • 1 ¼ cups blanched almond flour
  • cup coconut sugar
  • cup pecans
  • ¼ cup coconut oil
  • 10 dates
  • 2 tablespoons unsweetened shredded coconut

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, toss the sliced apples with cinnamon and 1 tablespoon of coconut sugar.
  3. Place the apple mixture in an 8x8 inch glass baking dish.
  4. Blend the remaining topping ingredients in a food processor for 30 seconds.
  5. Spoon the topping mixture evenly over the apples.
  6. Bake for 30 minutes or until the apples are cooked through, checking after 10 minutes and covering with foil if the topping browns too much.
