Paleo Apple Snack Cake

Ingredients

  • 2 cups almond flour
  • ½ tsp kosher salt
  • ½ tsp baking soda
  • ¼ cup arrowroot powder
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • ¼ cup coconut oil, melted
  • ½ cup raw honey
  • 1 large egg
  • 2 tsp vanilla extract
  • 1-2 medium apples, cored and diced
  • 2 tsp turbinado sugar (optional)
  • to taste freshly grated nutmeg (optional)

Instructions

  1. 1. Preheat the oven to 350°F (175°C).
  2. 2. In a large bowl, combine the almond flour, salt, baking soda, arrowroot powder, and cinnamon.
  3. 3. In a separate bowl, mix the melted coconut oil, honey, egg, and vanilla extract until well combined.
  4. 4. Combine the wet ingredients with the dry ingredients and stir until just mixed.
  5. 5. Gently fold in the diced apples.
  6. 6. Pour the batter into a greased 9x11 inch pan and sprinkle with turbinado sugar and nutmeg if using.
  7. 7. Bake for 30 minutes or until set in the center and lightly browned.
  8. 8. Let cool before serving.
