Ingredients

The bread

  • 2 cups gluten-free flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 large overripe bananas, mashed
  • ½ cup honey
  • ½ cup melted coconut oil
  • 1 tsp vanilla
  • 2 large eggs, room temperature

The middle cinnamon layer

  • ½ cup coconut sugar
  • 3 Tbsp melted coconut oil
  • tsp cinnamon

The topping

  • 1 cup finely chopped apples

Instructions

  1. Preheat the oven to 350°F.
  2. Combine flour, baking powder, baking soda, and salt in a small bowl.
  3. In a large bowl, mix mashed bananas, honey, melted coconut oil, and vanilla until combined.
  4. Whisk in the eggs.
  5. Fold the dry ingredients into the wet mixture until fully combined.
  6. Pour half of the batter into a greased loaf pan.
  7. Mix coconut sugar, melted coconut oil, and cinnamon in a small bowl.
  8. Sprinkle half of the cinnamon sugar mixture over the first half of the batter.
  9. Pour the remaining batter on top.
  10. Toss the chopped apples with the remaining cinnamon sugar mixture and sprinkle on top.
  11. Bake for 40-44 minutes, checking with a toothpick for doneness.
