Instructions
- Preheat the oven to 350°F.
- Combine flour, baking powder, baking soda, and salt in a small bowl.
- In a large bowl, mix mashed bananas, honey, melted coconut oil, and vanilla until combined.
- Whisk in the eggs.
- Fold the dry ingredients into the wet mixture until fully combined.
- Pour half of the batter into a greased loaf pan.
- Mix coconut sugar, melted coconut oil, and cinnamon in a small bowl.
- Sprinkle half of the cinnamon sugar mixture over the first half of the batter.
- Pour the remaining batter on top.
- Toss the chopped apples with the remaining cinnamon sugar mixture and sprinkle on top.
- Bake for 40-44 minutes, checking with a toothpick for doneness.
