Ingredients

The muffins

  • ¾ cup unsweetened applesauce
  • cup non-dairy milk
  • cup maple syrup
  • 2 teaspoons apple cider vinegar or lemon juice
  • ½ cup diced or shredded apple (optional)

The topping

  • cup diced apple
  • ¼ cup rolled oats
  • 2 Tablespoons coconut sugar or brown sugar substitute

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin.
  2. Mix the dry ingredients in a large bowl, ensuring no clumps remain.
  3. In a separate bowl, whisk together the wet ingredients until combined.
  4. Combine the wet and dry mixtures, stirring gently and adding apple cider vinegar.
  5. Optional: Fold in the diced apple into the batter.
  6. Spoon the batter into the muffin tin, filling each cup about ⅔ full.
  7. Prepare the topping by mixing the oats, diced apple, and coconut sugar, then sprinkle on top of the muffins.
  8. Bake for 18-22 minutes or until a toothpick comes out clean.
  9. Let the muffins cool on a rack for 5-10 minutes before serving.
