Instructions
- Preheat the oven to 375°F and prepare a muffin tin with nonstick spray.
- Combine the almond milk and lemon juice in a small bowl and set aside.
- In a large bowl, mix the gluten-free flour, chopped apple, sugar, cinnamon, baking powder, baking soda, and salt.
- Add the almond milk mixture, oil, and egg to the dry ingredients and stir to combine.
- Divide the batter into the muffin wells and bake for 25 minutes or until a toothpick comes out clean.
- Let the muffins cool in the tin for a few minutes before serving warm or at room temperature.
