Ingredients

  • 1 cup unsweetened almond milk
  • 1 tablespoon lemon juice
  • 2 cups gluten-free baking flour
  • 1 apple chopped into very small pieces
  • cup sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • cup olive oil or melted coconut oil
  • 1 egg lightly beaten

Instructions

  1. Preheat the oven to 375°F and prepare a muffin tin with nonstick spray.
  2. Combine the almond milk and lemon juice in a small bowl and set aside.
  3. In a large bowl, mix the gluten-free flour, chopped apple, sugar, cinnamon, baking powder, baking soda, and salt.
  4. Add the almond milk mixture, oil, and egg to the dry ingredients and stir to combine.
  5. Divide the batter into the muffin wells and bake for 25 minutes or until a toothpick comes out clean.
  6. Let the muffins cool in the tin for a few minutes before serving warm or at room temperature.
