Ingredients

The muffins

  • ½ cup ground flax seed
  • 1 ¼ cups gluten-free baking flour
  • 1 tablespoon baking powder
  • 3 tablespoons coconut sugar or cane sugar
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon sea salt
  • ¼ cup coconut oil, melted
  • 2 large eggs, lightly beaten
  • ½ cup unsweetened almond milk

For baking

  • as needed spray nonstick cooking spray

Instructions

  1. Preheat the oven to 350°F.
  2. Spray a muffin tin with nonstick cooking spray.
  3. In a large mixing bowl, combine the ground flaxseed, gluten-free flour, baking powder, coconut sugar, cinnamon, and sea salt.
  4. Add the melted coconut oil, eggs, and almond milk to the dry ingredients and mix well.
  5. Divide the batter evenly into the muffin tin.
  6. Bake for 18-22 minutes until golden brown and a toothpick comes out clean.
  7. Allow the muffins to cool slightly on a wire rack before serving.
