Instructions
- Preheat the oven to 350°F.
- Whisk together the eggs, coconut milk, and walnut oil in a large bowl.
- Stir in the Banana Muffin Mix, ground flax, turmeric, cinnamon, ginger, and black pepper until well blended.
- Fold in the walnuts and raisins, reserving some walnuts for topping if desired.
- Pour the batter into a greased or lined muffin tin, filling each cup about ⅔ full.
- Top with reserved walnuts if desired.
- Bake for 25 minutes or until a toothpick comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
