Ingredients

  • 2 large eggs
  • 1 cup coconut milk
  • 2 tablespoons walnut oil
  • 1 box Simple Mills Banana Muffin & Bread Almond Flour Mix (9 ounces)
  • 1 tablespoon ground flax
  • 2 teaspoons ground turmeric
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon black pepper
  • ½ cup chopped walnuts
  • ¼ cup raisins

Instructions

  1. Preheat the oven to 350°F.
  2. Whisk together the eggs, coconut milk, and walnut oil in a large bowl.
  3. Stir in the Banana Muffin Mix, ground flax, turmeric, cinnamon, ginger, and black pepper until well blended.
  4. Fold in the walnuts and raisins, reserving some walnuts for topping if desired.
  5. Pour the batter into a greased or lined muffin tin, filling each cup about ⅔ full.
  6. Top with reserved walnuts if desired.
  7. Bake for 25 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
