Gluten Free Banana, Date and Walnut Muffins

Ingredients

  • 2 cups almond meal
  • 2 tsp baking soda
  • 1 tbsp cinnamon
  • 2-3 pieces ripe bananas
  • 1 cup dates, pitted and chopped
  • 3 pieces eggs
  • ¼ cup coconut oil, melted
  • ¾ cup walnuts, chopped/crushed
  • a pinch sea salt

Instructions

  1. Preheat the oven to 180 degrees Celsius.
  2. In a large bowl, combine the almond meal, baking soda, salt, and cinnamon.
  3. In a food processor, blend the dates, bananas, eggs, and melted coconut oil until smooth.
  4. Add the wet mixture from the food processor to the dry mixture in the bowl and combine thoroughly.
  5. Fold in the chopped walnuts.
  6. Spoon the mixture into paper-lined muffin tins.
  7. Top with chia seeds and banana slices if desired.
  8. Bake for 25 minutes.
