Ingredients

The batter

  • ½ cup blanched almond flour
  • ½ cup golden flaxmeal
  • 1 teaspoon baking soda
  • ½ teaspoon celtic sea salt
  • 6 dates (remove pits)
  • 3 large eggs
  • 2 tablespoons olive oil
  • ¼ cup water

The mix-ins

  • ¼ cup raw sesame seeds
  • ¼ cup sunflower seeds
  • ½ cup raisins

Instructions

  1. 1. Combine almond flour, flax meal, baking soda, and salt in a large bowl.
  2. 2. Blend dates, eggs, olive oil, and water in a Vitamix until smooth.
  3. 3. Mix the wet ingredients into the dry ingredients, then stir in sesame seeds, sunflower seeds, and raisins.
  4. 4. Spoon the batter into a lined muffin pan.
  5. 5. Bake at 350°F for 20-25 minutes.
  6. 6. Cool and serve.
