Healthy Apple Oatmeal Muffins

Instructions
- Preheat the oven to 375°F.
- Line a 12-cup muffin tin with wrappers or spray with nonstick cooking spray.
- In a large bowl, mix together the flour, oats, baking powder, baking soda, salt, cinnamon, cardamom, and ginger.
- In a separate bowl, combine the applesauce, buttermilk, sugar, oil, egg, and vanilla extract.
- Create a well in the dry ingredients and pour in the wet mixture. Stir until just combined.
- Fold in the chopped apples and fill the muffin cups ⅔ to ¾ full.
- Sprinkle raw sugar and nutmeg on top of the muffins.
- Bake for 16-18 minutes until a toothpick comes out clean.
