Ingredients

The batter

  • 1 cup old-fashioned rolled oats
  • 1 cup unsweetened applesauce
  • ½ cup milk
  • 1 large egg
  • 1 teaspoon vanilla
  • ¼ cup butter or coconut oil, melted
  • cup granulated sugar or honey

The dry ingredients

  • ¾ cup whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup dried cranberries or raisins (optional)

Instructions

  1. Preheat the oven to 375°F and prepare a muffin tin.
  2. In a medium bowl, mix the oats, applesauce, milk, egg, vanilla, melted butter, and sugar.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  4. Make a well in the dry ingredients and pour in the wet mixture, stirring until just combined.
  5. Distribute the batter evenly among the muffin cups.
  6. Bake for 15-20 minutes until a toothpick comes out clean.
  7. Cool the muffins on a rack and freeze any extras for later.
