Ingredients

  • ¾ cup unsweetened applesauce
  • cup honey
  • 2 large eggs
  • cup coconut oil
  • 1 ½ teaspoons pure vanilla extract
  • 1 ½ cups white whole wheat flour
  • ¼ teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon allspice
  • ¼ teaspoon nutmeg
  • ½ teaspoon kosher salt
  • ½ cup old-fashioned rolled oats
  • 1 ½ tablespoons coarse sugar

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin.
  2. Mix the wet ingredients (applesauce, honey, eggs, coconut oil, vanilla) in one bowl.
  3. In another bowl, whisk together the dry ingredients (flour, baking powder, baking soda, spices, salt).
  4. Combine the wet and dry ingredients, then stir in the oats.
  5. Divide the batter into the muffin cups and sprinkle with coarse sugar if desired.
  6. Bake for 18 to 22 minutes until a toothpick comes out clean.
  7. Let cool before serving.
