Instructions
- Preheat the oven to 350°F and prepare a muffin tin.
- Mix the wet ingredients (applesauce, honey, eggs, coconut oil, vanilla) in one bowl.
- In another bowl, whisk together the dry ingredients (flour, baking powder, baking soda, spices, salt).
- Combine the wet and dry ingredients, then stir in the oats.
- Divide the batter into the muffin cups and sprinkle with coarse sugar if desired.
- Bake for 18 to 22 minutes until a toothpick comes out clean.
- Let cool before serving.
