Instructions
- Preheat the oven to 350ºF and line a muffin tin with muffin liners, optionally spraying them with cooking spray.
- Grate a large apple and squeeze out excess moisture using paper towels.
- In a medium bowl, combine the grated apple with the dry ingredients and mix well.
- In a large bowl, whisk the eggs and then add the maple syrup, applesauce, almond milk, and vanilla, mixing until combined.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Stir in the melted coconut oil until fully incorporated.
- Fill each muffin cup about ¾ full and bake for 18-22 minutes, or until the center is cooked through.
- Let the muffins cool for 5 minutes in the tin before transferring them to a wire rack to cool completely.
