Ingredients

Dry Ingredients

  • 1 cup shredded apples, moisture removed
  • cups white whole wheat flour
  • ½ cup coconut sugar or light brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda

Wet Ingredients

  • 2 large eggs
  • ½ cup maple syrup
  • 1 cup unsweetened applesauce
  • ½ cup plain unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 3 tablespoons coconut oil, melted

Instructions

  1. Preheat the oven to 350ºF and line a muffin tin with muffin liners, optionally spraying them with cooking spray.
  2. Grate a large apple and squeeze out excess moisture using paper towels.
  3. In a medium bowl, combine the grated apple with the dry ingredients and mix well.
  4. In a large bowl, whisk the eggs and then add the maple syrup, applesauce, almond milk, and vanilla, mixing until combined.
  5. Add the dry ingredients to the wet ingredients and mix until just combined.
  6. Stir in the melted coconut oil until fully incorporated.
  7. Fill each muffin cup about ¾ full and bake for 18-22 minutes, or until the center is cooked through.
  8. Let the muffins cool for 5 minutes in the tin before transferring them to a wire rack to cool completely.
