Ingredients

  • cups whole wheat pastry flour
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup maple syrup
  • ½ cup plain Greek yogurt
  • cup almond milk
  • 3 tablespoons coconut oil
  • teaspoons vanilla extract
  • 1 cup shredded apple

Instructions

  1. Preheat the oven to 350°F.
  2. Peel and grate the apple.
  3. In a bowl, whisk together the flour, baking soda, cinnamon, and salt.
  4. In another bowl, combine the eggs, maple syrup, Greek yogurt, milk, melted coconut oil, and vanilla until well mixed.
  5. Add the wet ingredients to the dry ingredients and mix gently, then fold in the shredded apple.
  6. Coat a muffin pan with non-stick spray and fill each cup almost to the top with batter.
  7. Bake for 18 to 22 minutes until a toothpick comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack.
