Instructions
- Preheat the oven to 350°F.
- Peel and grate the apple.
- In a bowl, whisk together the flour, baking soda, cinnamon, and salt.
- In another bowl, combine the eggs, maple syrup, Greek yogurt, milk, melted coconut oil, and vanilla until well mixed.
- Add the wet ingredients to the dry ingredients and mix gently, then fold in the shredded apple.
- Coat a muffin pan with non-stick spray and fill each cup almost to the top with batter.
- Bake for 18 to 22 minutes until a toothpick comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack.
