Ingredients

  • 2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground allspice
  • ½ teaspoon salt
  • 2 large eggs
  • ¾ cup unsweetened applesauce
  • cup pure maple syrup
  • cup coconut oil
  • 1 ½ teaspoons pure vanilla extract
  • 2 cups shredded apple
  • ¾ cup chopped pecans or walnuts
  • 1 tablespoon coarse sugar

Instructions

  1. Preheat the oven to 425°F (218°C) and prepare a muffin pan.
  2. In a large bowl, mix the dry ingredients together.
  3. In another bowl, whisk together the wet ingredients.
  4. Combine the wet and dry ingredients, then fold in the shredded apple and nuts if using.
  5. Fill the muffin liners to the top and sprinkle with coarse sugar if desired.
  6. Bake at 425°F for 5 minutes, then reduce the temperature to 350°F (177°C) and bake for an additional 16-18 minutes.
  7. Cool the muffins in the pan for 5 minutes before transferring them to a wire rack.
