Instructions
- Preheat the oven to 425°F (218°C) and prepare a muffin pan.
- In a large bowl, mix the dry ingredients together.
- In another bowl, whisk together the wet ingredients.
- Combine the wet and dry ingredients, then fold in the shredded apple and nuts if using.
- Fill the muffin liners to the top and sprinkle with coarse sugar if desired.
- Bake at 425°F for 5 minutes, then reduce the temperature to 350°F (177°C) and bake for an additional 16-18 minutes.
- Cool the muffins in the pan for 5 minutes before transferring them to a wire rack.
