Instructions
- 1. Preheat the oven to 350°F.
- 2. Combine all dry ingredients in a large mixing bowl.
- 3. In a separate small bowl, whisk the eggs.
- 4. Add the sweetener, vanilla, and melted coconut oil to the whisked eggs and mix well.
- 5. Pour the wet ingredients into the dry ingredients and stir to combine, being careful not to overmix.
- 6. Gently fold in the applesauce.
- 7. Fill the muffin tray with the batter, using liners or non-stick spray.
- 8. Bake for 18-20 minutes until golden and a toothpick comes out clean.
