Ingredients

  • 1 ¾ cups gluten-free flour or white whole wheat flour
  • 1 tbsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ground ginger
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs, room temperature
  • ½ cup maple syrup or honey
  • 1 tsp vanilla extract
  • ½ cup coconut oil, melted
  • ½ cup unsweetened applesauce

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. Combine all dry ingredients in a large mixing bowl.
  3. 3. In a separate small bowl, whisk the eggs.
  4. 4. Add the sweetener, vanilla, and melted coconut oil to the whisked eggs and mix well.
  5. 5. Pour the wet ingredients into the dry ingredients and stir to combine, being careful not to overmix.
  6. 6. Gently fold in the applesauce.
  7. 7. Fill the muffin tray with the batter, using liners or non-stick spray.
