Ingredients

Dry Ingredients

  • 1 ¾ cups white whole wheat flour or regular whole wheat flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients

  • 1 cup grated apple
  • 1 cup apple diced into ¼” cubes
  • cup melted coconut oil or extra-virgin olive oil
  • ½ cup maple syrup or honey
  • 2 units eggs, preferably at room temperature
  • ½ cup plain Greek yogurt
  • ½ cup applesauce
  • 1 teaspoon vanilla extract

Topping

  • 1 tablespoon turbinado sugar (for sprinkling on top)

Instructions

  1. Preheat the oven to 425°F and grease the muffin tin if necessary.
  2. In a large bowl, mix the dry ingredients thoroughly.
  3. Add the grated and chopped apple to the dry mixture and stir to combine.
  4. In another bowl, whisk together the oil and maple syrup, then add the eggs, yogurt, applesauce, and vanilla, mixing well.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Divide the batter evenly among the muffin cups and sprinkle with turbinado sugar.
  7. Bake for 13 to 16 minutes until golden and a toothpick comes out clean.
  8. Cool the muffins on a rack and store leftovers appropriately.
