Instructions
- Preheat the oven to 425°F and grease the muffin tin if necessary.
- In a large bowl, mix the dry ingredients thoroughly.
- Add the grated and chopped apple to the dry mixture and stir to combine.
- In another bowl, whisk together the oil and maple syrup, then add the eggs, yogurt, applesauce, and vanilla, mixing well.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Divide the batter evenly among the muffin cups and sprinkle with turbinado sugar.
- Bake for 13 to 16 minutes until golden and a toothpick comes out clean.
- Cool the muffins on a rack and store leftovers appropriately.
