Instructions
- Preheat the oven to 375°F and prepare a muffin pan.
- Blend the oats to a fine flour consistency and mix with the dry ingredients.
- Finely dice the apple and coat it with the oat mixture.
- In a separate bowl, whisk the wet ingredients together until combined.
- Fold the dry mixture into the wet mixture until just combined.
- Divide the batter into the muffin cups and sprinkle with turbinado sugar.
- Bake for 15-18 minutes until a toothpick comes out clean.
- Let cool slightly before serving.
