Ingredients

The batter

  • 3 cups old-fashioned oats
  • 1 tablespoon pumpkin pie spice
  • teaspoons baking soda
  • ¾ teaspoon fine sea salt
  • 1 medium apple, finely diced
  • 2 large eggs
  • cup unsweetened almond milk
  • ¾ cup unsweetened applesauce
  • ½ cup maple syrup
  • 3 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract

Topping

  • to taste none turbinado sugar for sprinkling

Instructions

  1. Preheat the oven to 375°F and prepare a muffin pan.
  2. Blend the oats to a fine flour consistency and mix with the dry ingredients.
  3. Finely dice the apple and coat it with the oat mixture.
  4. In a separate bowl, whisk the wet ingredients together until combined.
  5. Fold the dry mixture into the wet mixture until just combined.
  6. Divide the batter into the muffin cups and sprinkle with turbinado sugar.
  7. Bake for 15-18 minutes until a toothpick comes out clean.
  8. Let cool slightly before serving.
