Instructions
- Preheat the oven to 350°F.
- In a large bowl, mix gluten-free flour, pumpkin pie spice, baking powder, baking soda, and salt until combined.
- In another bowl, add pumpkin puree, unsweetened applesauce, coconut oil, vanilla extract, and eggs.
- Pour the wet ingredients over the dry ingredients and mix thoroughly.
- Fold in the diced granny smith apples.
- Place cupcake liners in each muffin tin and fill each about ¾ full with the batter. Top with chopped pecans if desired.
- Bake for 20-24 minutes until a toothpick comes out clean.
- Remove from the oven and let sit for 5-10 minutes before enjoying.
