Instructions
- Preheat the oven to 325°F and prepare a muffin tin with nonstick spray.
- In a large bowl, whisk together the oil, honey, and Greek yogurt until smooth.
- Add the egg and vanilla, mixing until well combined.
- Whisk in the pumpkin puree.
- Sprinkle the baking soda, cinnamon, nutmeg, ginger, allspice, and salt over the mixture and stir to combine.
- Gently fold in the flour and oats until just incorporated.
- Scoop the batter into the muffin cups, filling them generously and adding extra oats on top if desired.
- Bake for 24 to 29 minutes, or until a toothpick comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack.
