Ingredients

  • 2 tablespoons canola oil or melted and cooled coconut oil
  • ½ cup honey or pure maple syrup
  • cup plain non-fat Greek yogurt
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 15-ounce can pure pumpkin
  • 1 teaspoon baking soda
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground allspice
  • ¼ teaspoon kosher salt
  • 1 ¼ cups white whole wheat flour
  • ¾ cup plus 2 tablespoons rolled oats

Instructions

  1. Preheat the oven to 325°F and prepare a muffin tin with nonstick spray.
  2. In a large bowl, whisk together the oil, honey, and Greek yogurt until smooth.
  3. Add the egg and vanilla, mixing until well combined.
  4. Whisk in the pumpkin puree.
  5. Sprinkle the baking soda, cinnamon, nutmeg, ginger, allspice, and salt over the mixture and stir to combine.
  6. Gently fold in the flour and oats until just incorporated.
  7. Scoop the batter into the muffin cups, filling them generously and adding extra oats on top if desired.
  8. Bake for 24 to 29 minutes, or until a toothpick comes out clean.
  9. Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack.
