Instructions
- Preheat the oven to 350°F and line a muffin tin with liners and nonstick spray.
- In a large bowl, whisk together the pumpkin puree, melted coconut oil, eggs, maple syrup, and vanilla until well combined.
- In a separate small bowl, mix the oat flour, baking powder, baking soda, salt, and pumpkin pie spice.
- Add the dry ingredients to the wet ingredients and stir until fully combined. If desired, stir in any mix-ins like chocolate chips.
- Scoop the batter into the muffin tin and bake for about 22 minutes, or until a toothpick inserted comes out clean.
