Ingredients

The batter

  • cup melted coconut oil or extra-virgin olive oil
  • ½ cup maple syrup or honey
  • 2 units eggs, at room temperature
  • 1 cup pumpkin purée
  • ¼ cup milk of choice
  • 2 teaspoons pumpkin spice blend
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • cups whole wheat flour
  • cup old-fashioned oats

Optional toppings

  • 2 teaspoons turbinado (raw) sugar

Instructions

  1. Preheat the oven to 325°F (165°C) and grease the muffin tin if necessary.
  2. In a large bowl, whisk together the oil and maple syrup or honey, then add the eggs and beat well.
  3. Stir in the pumpkin purée, milk, pumpkin spice blend, baking soda, vanilla extract, and salt.
  4. Mix in the flour and oats until just combined, adding any optional mix-ins if desired.
  5. Divide the batter evenly among the muffin cups, sprinkle with oats and raw sugar if using.
  6. Bake for 22 to 25 minutes, or until a toothpick comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring them to a cooling rack.
