Instructions
- Preheat the oven to 325°F (165°C) and grease the muffin tin if necessary.
- In a large bowl, whisk together the oil and maple syrup or honey, then add the eggs and beat well.
- Stir in the pumpkin purée, milk, pumpkin spice blend, baking soda, vanilla extract, and salt.
- Mix in the flour and oats until just combined, adding any optional mix-ins if desired.
- Divide the batter evenly among the muffin cups, sprinkle with oats and raw sugar if using.
- Bake for 22 to 25 minutes, or until a toothpick comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a cooling rack.
