Ingredients

  • 2 cups rolled oats
  • 1 cup pumpkin puree
  • 6 ounces plain Greek yogurt
  • ½ cup real maple syrup
  • 2 units eggs
  • 1 teaspoon baking soda
  • pinch cinnamon
  • pinch salt
  • to taste chocolate chips (optional)

Instructions

  1. Preheat the oven to 375 degrees.
  2. Pulse the rolled oats in a food processor or blender until mostly smooth.
  3. Add the remaining ingredients to the oats and blend until mixed, leaving some oat pieces.
  4. Stir in chocolate chips if desired.
  5. Transfer the mixture to a greased muffin tin.
  6. Bake for about 15 minutes until done.
  7. Enjoy warm or store for later.
