Instructions
- Preheat the oven to 375 degrees.
- Pulse the rolled oats in a food processor or blender until mostly smooth.
- Add the remaining ingredients to the oats and blend until mixed, leaving some oat pieces.
- Stir in chocolate chips if desired.
- Transfer the mixture to a greased muffin tin.
- Bake for about 15 minutes until done.
- Enjoy warm or store for later.
