Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup canned pumpkin puree
  • ¾ cup plain Greek yogurt or sour cream
  • ⅓ to ½ cup pure maple syrup, honey, or sugar
  • 2 large eggs
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 375°F and prepare a muffin tin.
  2. Blend the oats until they resemble coarse flour.
  3. Add the remaining ingredients (except chocolate chips) to the blender and blend until combined.
  4. Stir in chocolate chips if desired.
  5. Scoop the batter into the muffin tin and bake for 15-18 minutes.
  6. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack.
