Ingredients

Dry ingredients

  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt

Wet ingredients

  • 1 cup pumpkin puree
  • 2 large eggs
  • ½ cup oil
  • cup water
  • 1 tsp vanilla extract

Mix-ins

  • 12 oz chocolate chips

Instructions

  1. 1. Preheat the oven to 350°F and line muffin tins with liners and non-stick spray.
  2. 2. In a medium bowl, whisk together all dry ingredients.
  3. 3. In a large bowl, beat the eggs with pumpkin, then mix in the oil, water, and vanilla.
  4. 4. Gradually add the dry ingredients to the wet ingredients until fully combined.
  5. 5. Gently fold in the chocolate chips, being careful not to over mix.
  6. 6. Bake for 19-22 minutes, or until a toothpick inserted in the center comes out clean.
