Instructions
- Preheat the oven to 400°F and prepare a muffin tin with cooking spray or liners.
- In a bowl, whisk together the eggs, sugar, pumpkin puree, and vegetable oil until smooth.
- Add the flour, baking soda, baking powder, pumpkin pie spice, vanilla extract, and salt to the mixture and stir until just combined.
- Fold in 1 cup of chocolate chips.
- Divide the batter evenly among the muffin cups and sprinkle the remaining chocolate chips on top.
- Bake for 17-22 minutes until lightly browned and a toothpick comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
- Serve or store in an airtight container for up to 5 days.
