Ingredients

  • 2 whole eggs
  • 1 cup granulated sugar
  • 1 cup pumpkin puree
  • ¾ cup vegetable oil
  • cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • teaspoons pumpkin pie spice
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • cups semisweet chocolate chips
  • as needed spray cooking spray

Instructions

  1. Preheat the oven to 400°F and prepare a muffin tin with cooking spray or liners.
  2. In a bowl, whisk together the eggs, sugar, pumpkin puree, and vegetable oil until smooth.
  3. Add the flour, baking soda, baking powder, pumpkin pie spice, vanilla extract, and salt to the mixture and stir until just combined.
  4. Fold in 1 cup of chocolate chips.
  5. Divide the batter evenly among the muffin cups and sprinkle the remaining chocolate chips on top.
  6. Bake for 17-22 minutes until lightly browned and a toothpick comes out clean.
  7. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  8. Serve or store in an airtight container for up to 5 days.
