Instructions
- Preheat the oven to 325°F and grease or line a muffin tin.
- In a large bowl, mix the melted coconut oil, honey, and eggs together.
- Add the pumpkin, almond milk, and vanilla to the mixture and mix well.
- In a small bowl, combine the whole wheat flour, baking soda, salt, cinnamon, ground cloves, and nutmeg.
- Slowly add the dry ingredients to the wet ingredients and mix until combined.
- Fold in the chocolate chips as mix-ins.
- Pour the batter into the muffin tins and top with additional chocolate chips.
- Bake for 22-25 minutes, or until a toothpick comes out clean.
- Let the muffins cool completely before enjoying.
