Instructions
- 1. Preheat the oven to 325°F and spray a muffin tin with cooking spray.
- 2. In a small bowl, mix flaxseed and water, and let it sit for five minutes to gel.
- 3. Blend 1 cup of old-fashioned oats into a flour consistency and combine with the dry ingredients in a large bowl.
- 4. In a medium bowl, mix the wet ingredients including the flax mixture.
- 5. Combine the wet and dry ingredients, stirring until just mixed, then fold in the chocolate chips.
- 6. Pour the batter into the muffin tins and bake for about 22 minutes.
- 7. Allow the muffins to cool in the tin for 10 minutes before transferring them to a cooling rack.
