Ingredients

  • 2 tbsp ground flaxseed
  • 6 tbsp water
  • 1 cup old-fashioned oats, ground into flour
  • ¾ cup old-fashioned oats
  • 1 cup almond meal
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tbsp cinnamon
  • 1 ½ tsp ground ginger
  • ½ tsp cloves
  • ¼ tsp nutmeg
  • 1 cup canned pumpkin
  • ¼ cup unsweetened applesauce
  • cup pure maple syrup
  • 1 tsp vanilla extract
  • ⅓-½ cup chocolate chips

Instructions

  1. 1. Preheat the oven to 325°F and spray a muffin tin with cooking spray.
  2. 2. In a small bowl, mix flaxseed and water, and let it sit for five minutes to gel.
  3. 3. Blend 1 cup of old-fashioned oats into a flour consistency and combine with the dry ingredients in a large bowl.
  4. 4. In a medium bowl, mix the wet ingredients including the flax mixture.
  5. 5. Combine the wet and dry ingredients, stirring until just mixed, then fold in the chocolate chips.
  6. 6. Pour the batter into the muffin tins and bake for about 22 minutes.
  7. 7. Allow the muffins to cool in the tin for 10 minutes before transferring them to a cooling rack.
