Instructions
- Preheat the oven to 350°F and grease a muffin tin.
- In a large bowl, whisk together the almond flour, oat flour, cinnamon, ginger, cloves, nutmeg, baking soda, baking powder, and salt.
- In a medium bowl, whisk together the pumpkin, eggs, maple syrup, oil, and vanilla until smooth.
- Add the wet ingredients to the dry ingredients and mix until just combined, then fold in the chocolate chips.
- Spoon the mixture into the muffin tin, filling each cup to the top and smoothing the tops.
- Bake for 25 minutes or until a knife comes out clean, then cool in the pan for 20 minutes before transferring to a wire rack.
