Ingredients

  • ¾ cup almond butter
  • cup pure maple syrup
  • ½ cup canned pumpkin puree
  • 2 large eggs
  • 1 tsp vanilla extract
  • cup cocoa powder
  • 2 tbsp ground flaxseed
  • 1 tsp baking powder
  • ¼ tsp fine sea salt
  • cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare the muffin tin with liners and cooking spray.
  2. In a mixing bowl, combine almond butter, maple syrup, pumpkin, eggs, and vanilla, and whisk until smooth.
  3. Add cocoa powder, ground flaxseed, baking powder, salt, and chocolate chips, and whisk again until smooth.
  4. Spoon the batter evenly into the muffin liners, filling them three-quarters full.
  5. Bake for 20 minutes or until a knife comes out clean, then cool on a wire rack.
